Tasting notes
Great colour intensity, with deep red and black tones. On the nose, black fruit such as fig and plum weave together with chocolate and coffee from the oak. On the palate it has a sweet, elegant entry and good length that shows its personality.
Winemaking
It comes from plot number 8, which has always shown perfect balance for this wine. Picked in late February and the first week of March, yielding around 80 quintals per hectare. The picking date is decided by tasting the berries and checking the analysis. A 48-hour cold soak, a 10-day alcoholic fermentation between 26 and 28 °C, and a post-fermentation maceration of 7 to 10 days. It rests in second and third use barrels for 8 to 10 months, plus 6 months in bottle.
