Tasting notes
High colour intensity, deep and dark, with intense red tones. On the nose, ripe black fruit with chocolate and coffee. On the palate it shows its character: a soft but persistent entry, with a balance between residual sugar and alcohol. Ideal with a dessert at the end of a meal.
Winemaking
It was born out of the search for new products with the variety that represents us. We select a couple of rows from the Petit Verdot plot and let them ripen until May: a very late harvest that reaches a high sugar concentration. It is vatted without crushing and fermentation is worked only by punch-down, slower and more controlled. It stops on its own when the wine reaches 15 degrees of alcohol and 80-90 g/l of natural sugar. At that point we fortify with Petit Verdot grappa up to 18 degrees and move it to 225-litre second use barrels.
